Just steps from the bustle of central Shizuoka, behind a quiet alley in the Ryogaecho district, stands a single counter of solid hinoki cypress. Here, far from the crowds of Tokyo and Kyoto, you will find something increasingly rare — a master who knows his fish by hand, and a room designed for nothing but your comfort.

From law books

Chef Satoshi Fujiwara once studied law, bound for a career in the courtroom. But a part-time job at a sushi restaurant changed everything. Drawn to the craft, he chose the longer road — first mastering fish at a fishmonger, learning to read and cut every catch, before ever stepping behind a sushi counter.

He honed his craft for years at one of Shizuoka’s most respected sushi houses, eventually rising to head the counter. What he inherited was more than technique: the art of reading each guest, the rhythm of the meal, the spirit of the trade itself — things that can only be passed down under a master’s roof.

In 2015, he opened his own house in Ryogaecho. A single plank of solid hinoki cypress for the counter. Fresh seasonal flowers, never absent. Spotless surfaces, tended with monastic care. Every detail reflects a quiet, honest character — a room built not to impress, but to put you at ease.

Do I need a reservation?
Reservations are recommended and can be made by phone. Walk-ins are welcome when seats are available.
Is there an English menu or English-speaking staff?
English may be limited, but the master will do his best to guide you. Pointing and a smile go a long way here.
Are credit cards accepted?
Yes. Cash and major credit cards are both accepted.
Is there a dress code?
None at all. Come as you are — what matters most here is that you relax and enjoy.
Can I dine alone?
Absolutely. The hinoki counter is the perfect seat for a solo guest, with the master’s work right before you.
Can you accommodate allergies?
Yes. Please let us know when you reserve, and we will do our best to accommodate you.
